lemongrass thai coconut curry soup
2 tablespoons coconut oil
2 lemongrass stalks (cut in half)
4 garlic cloves (minced)
1 teaspoon ginger (minced)
2 pinch red pepper flakes
2 tablespoons green curry paste
4 cups veggie broth
1 cup water
2 handfuls of sliced mushrooms
4 oounces snow peas
4 ounces or more baby bok choy (chopped into 3 inch pieces
2/3 cup scallions
red potatoes, diced
1 tablespoon of lime juice (1 lime-ish)
salt & pepper
2 drops ginger EO
2 drops lemongrass EO
Maifun Brown Rice Noodles
I simmer the lemongrass, garlic, ginger, scallions, red pepper flakes, green curry paste and coconut oil for about 10 minutes.
Add the rest of the ingredients except noodles and cook on medium for 45 minutes.
Turn off head, add noodles and let sit for 10 minutes.
