vegan & paleo || gluten & soy free

base: 1 cup walnuts + 2 tbs honey + 2 tbs liquid coconut oil + 1 cup shredded coconut blended together in food processor until fine meal forms

filling: 2 cups cashews soaked overnight + 2 tbs honey + 1 tbs vanilla + 1/3 cup liquid coconut oil + 1 cup blueberries + 1 lemon juiced + 1 lemon rind + 1 cup coconut milk + 3 drops lemon essential oil. put in food processor until completely smooth. about 5 minutes. 

top with more blueberries and lemon zest βœŒπŸΌοΈπŸƒ

and freeze for two hours
